Potato and Turnip Casserole with Currants Sauce. Kartuli- kaalikavorm sõstrakastmega

The Baltic Way was a peaceful political demonstration which took place on 23 August 1989 when approximately two million people (which is 25% of Baltic State population) joined their hands forming a 600 km long human chain through the Baltic countries, thus demonstrating their unity in their efforts towards freedom.

We were ready for everything: Estonians promised to eat even potato peelings in name of an independent state.

Potato skins are still very delicious dish. But this year I will introduce more advanced recipe 🙂
Let’s add some turnip and currants.
A light vegetable dinner. Sweet turnip and potato are complemented with the tartness of red currants. You get an even better and different result using black currants. to reduce baking and cooking time, use pre-cooked vegetables.

Zucchini and Cheese Pie. Suvikõrvitsa ja juustupirukas

I have to say that I just love cheese. And specially baked cheese. So I love for example Georgian cuisine  where a lot of cheese pies and dishes.
To get lighter version is reasonable to add some vegetables. Like in this recipe. Zucchini does not have very special taste. It gives moisture, juiciness, structure, volume and make this pie lighter.

Cold Summer Beetroot Soup. Külm peedi püreesupp

Beet root is delicious, healthy and very suitable for soups. You can cook hot soup Borš- look at for recipe. But during summer time at least I need something cold, refreshing and easy.

Red Currant and Cacao Cake. Punasesõstra ja kakaokook

A delicious and very sweet old school real food cake.

Wonderful combination and good old flavours. Light quark cream complements rich and sweet cacao layers. Sour and sweet berries give juiciest and moisture. And to get real Estonian touch and twist, use for seasoning Vana Tallinn liqueur. Vana Tallinn is a dark brown and robust Rum based liqueur developed in the 1960s. he liqueur is sweet with a hint of Jamaican rum, flavoured by various natural spices, including Citrus oil, cinnamon and vanilla .

Vana Tallinn is the Must Be souvenir from Estonia. But… if you do not have this. Of course. Add some other rum or bake it without alcohol 🙂

Simple Cold Quark Sauce. Külm kohupiimakaste

Amazing and very simple summer dinner. Full of proteins, easy to do and very delicious. Serve with boiled new potatoes and use a lot of greens.kohup kaste1 (1)

Cold Quark Sauce

  • Servings: 4-6
  • Difficulty: easy

A fresh, light, cold sauce with new potatoes for a summer dinner.

Ingredients

  • 200 g- 300 g quark. Look how to make quark
  • 1/2 -1 glass of milk or sour cream
  • –  salt, pepper, chopped greens and/or caraway seeds

Directions

  1. In a medium bowl, toss together quark and milk. Add milk or sour cream as much you like for suitable consistent
  2. Season
  3. Serve with boiled potatoes and with salted/marinated herring

Meadowsweet Syrup with Red Currants. Angervaksa – punasesõstrasiirup

angervaksasiirup (10)Meadow-sweet is just amazing. It is healthy, taste and flavour are wonderful. Smell it! The smell drives your crazy, This is a smell of summer and freedom and childhood summer holidays with grandmother.
And what is most important: it is for free. A small walk in the meadows is just for the bonus.

Meadowsweet by yourself is sweet and tastes like almond. Currants give more deepness, flavour and tartness. You can use other sour berries like rhubarb or strawberries.  And get a maybe more interesting result.

And look at this colour!! 🙂

Where to use?  Taste the drinks. During wintertime, it helps to cure fever and cold. Use for flavouring salads, marinades and sauces.

Fish in newspaper

I got this idea from Jamie Oliver. And it sounded very intriguing to me. Is it really possible to grill fish in the newspaper? And yes, this is possible. And the result is juicy and delicious.

 

 


Clean a fish. Using a sharp knife, make a shallow cut from here along the belly of the fish, stopping at the base of the gills. Use your fingers or a dull spoon to scoop out the fish’s innards.
Fill fish with a bit of the oil, leek, lime and dill. Season with pepper and salt.
Wrap a fish in a double newspaper paper. Dip package into the water ( do not soak! Just for a minute), and start grilling.

Baking time depends on fish. But it takes for 15-20 minutes. But check by time to time!
