Hazelnut and Chocolate Cake.
A delicious and very sweet old school real food cake
This cake from an era, when people ate sugar and butter and flour… Very sweet, very rich. Buttercream and chocolate and a lot of crunchy nuts.
This is a cake from my childhood. The cake from a time when calories were burned playing in the yard. But still. This simple and rich cake was my favourite at this time and now, as well.
Well, now I just use less sugar and more cacao :)…

Soft Gingerbread Cake. Pehme plaadipiparkook
Have I said that I just love gingerbread.
The real and my favourite gingerbread is very thin and crispy. Look at for recipe here.
But sometimes you want some change and something different.
Soft gingerbread cake has all best features of gingerbread: flavour, smell, aroma, seasons… but soft.
Juicy and fruity cowberry- apple sauce complements very well gingerbread flavour and reduce sweetness ( and makes it healthier dessert :))

Beetroot and Herring Salad. Rosolje
Rosolje is a traditional salad, as Estonian Potato Salad, where all families has their own recipe.
For sure it contains beetroot. And as says name ” rosol” (means (in Russian) cucumber brine,) salted/marinated/fermented cucumbers is very important, as well.
Usually we make this with salted /marinated herring. But I have eaten Rosolje without herring and with meat or without meat and fish, as well.
Rosolje second meaning in Estonian is mess, diverse, colorful. So, this is my recipe
Apple Cake with Halva. Halvaaga õunakook
Halva has nothing to do with Estonia. But I love halva.
This cake is a real fusion. Mix of Estonian traditional quark and eastern halva.
A delicious sweet and sour and juicy apple filling, complemented by Eastern flavours of halva, makes together for an amazing cake.
This cake is an eggfree.
In case you have not quark, use ricotta or mascarpone or cream cheese. But to get orignal and the best result prepare quark by yourself.
You can not imagine how simple it is !
