Before.
Prepare classical pastry.

Ingredients

  • Cut 150 g butter in small cubes.
  • Add 300 g flour
  • 1 teaspoon salt and 1 teaspoon baking soda
  • 1 whipped egg
  • ca 100 g sour cream or yoghurt
  • Mixed pastry put in fridge at least for 1/2 hour.

    Cover:

  • 100 g chantarelles
  • 1 oninon,sliced
  • ca 100 g ham
  • 2 eggs
  • ca 300 ml milk or cream.
  • 100 g grated cheese.

Kohukestest kohupiimakooki?

Kuna välismaal on kohupiimaga nagu on, aga kohupiimakooki tahaks, siis tuleb mõelda raamidest väljas.
nn Vene poodides on reeglina müügil kohukesed*.  Kas kohukestest on võimalik normaalne kook meisterdada?

Üks kohuke kaalub  ca 40 g, ja glasuuri on 18-20%, seega 200 g kohupiima jaoks on vaja  umbes 7 kohukest.
Kõige paremad importijad on leedukad, aga kahjuks mu kodupoes Leedu kohukesi parasjagu polnud.

Seega võtsin katseks Karumsid. Karumsilt on teatavasti glasuuri eemaldamine keeruline. Aga teistelt soovitan suuremad glasuuritükid ära võtta.
Kuna tegemist oli katsega, siis  põhjaga mässama ei hakanud, prooviks sai tehtud ainult ülemine osa nn kohupiimavormina.

Kohukesed pressisin massiks. Lisasin ühe lahtiklopitud muna ja ca 100 g hapukoort *
Kuna glasuur jäi sisse, siis segu oli selline… kahtlast värvi.  Ja ka lõpptulemus nn marmorjas.

Aga väga maitsev. Ja kohutavalt magus.

Segu panin võitatud vormi, koogi jaoks tuleks see valada koogipõhjale. Ja küpsetasin 180 kraadi juures u 20 minutit.

Zucchini cakes

Grate 2 Zucchinis and 1 Potato. Add some salt ad leave to seep at least for 20 minutes.
From time to time squeezing water out.

Grate  in the other bowl ca 50 g Parmesan or other hard cheese. Add  1 choped onion and sliced garlic.

Zucchini Cakes

 

Mix vegetables with cheese, add 1 whiped egg, 2 table spoon flour and sunflower seeds.
Season with salt, pepper, nutmeg and basil.

 

Preheat oven 220 C.

Fry on pan in hot oil zuccini cakes.
Ready cakes put in to oven to mature, while making dressing.

 

 

Freshly Salted Cucumbers

Freshly Salted Cucumbers

Wash with hot water very carefully cucumbers and jars.

For faster results can be cut off the ends of cucumbers

Boil 1 liter water.
Add 1 tablespoon sugar and 1 tablespoon salt
and 1 tablespoon food vinegar (30%)

If you do not like vinegar, make just salted cucumbers:
1 litre water
2 tablespoon salt
1 tablespoon sugar

Put the cucumbers, garlic, peeled horseradish root, dill roots and flowers and black currant leaves (if any) into the jar.
Add Marinade. Cover, but not airtight. Leave in room temperature. After few hours allready ready to eat!

1 litre water
1 tablespoon salt
1 tablespoon sugar
3 tablespoon food vinegar (30%)
(other as previous).
Close airtight

Chicken Fillet with Fresh Cheese filling

Chicken Fillet with Fresh Cheese Filling

500 g puff pastry, thawed if frozen
400 g chicken fillet
salt, pepper, carlic
ca 100 g fresh cheese

Prehaet oven.

Cut the
chicken fillet lengthwise

Season fillet with salt and pepper and pressed carlic. And fill with fresh cheese.

Heat the oil in a frying pan. Fry the fillet on the all sides.

Wrap fried chicken in to puff pastry and bake in preheated oven 180 C ca 20 minutes.

Pour in to bouling water frozen peas and some slice garlic.
Boil 3 min.

Strain water in to other dish.

Puree peas. Add some garlic fresh cheese and cream and/or boiled pea-water to achive  the desired consistency.

Carrot Pies by Maie

Carrot Pies

This amount for 2 full plate small Carrot Pies.

Pastry:

Leave
25 g yeast
1 glass room-temp water and
3 tsp sugar
to stay in one bowl.

 

In the other bowl chop:
200 g cold butter

3 glass sifted flour
1 tsp salt
an 1 cm x 1 cm  cubes,
add gradually 1 whipped egg.

 

 

Add gradually yeast-mix and chop, chop, chop….
ready pastry  put in plastic bag for   1 till  24 hours in to  fridge.

Filling :
 500 g boiled carrots
100 g boiled rice
1 boiled egg
50 g melted butter
chop, and add
1 raw egg
Season with salt, pepper and nutmeg.

 

form small pies. Spot with beaten egg. Bake 225 C  ca 12 minutes, while pies are ready.
