In Estonia is summer. And May and June are months of Rhubarb. Let me remind to you best cakes. In all recpies you can replace rhubarb and use for example apples or other berries or fruits.

This is one of my favourite cake. I love mellow biscuit and soft bottom. I love a combination of tart rhubarb or apples and sweet dough.

This looks delicious. But I am a bit confused as to the rhubarb crumb. Is that something that is pre made and purchased?

How wonderful to have a sign of life from you Ruta ! And with such an array of recipes for rhubarb goodies ! All sound familiar from way back and may induce me to reach for the fruit at the markets . . . and, since Estonian baked goods generally are not over-abundant in sugar . . . you never know . . . the quark offering is calling out to me . . . shall tell some others also methinks . . .
