Recently I saw TV cooking show, where participants were very amazed about beetroot soup.
Beet root is delicious, healthy and very suitable for soups. You can cook hot soup Borš- look at for recipe. But during summer time at least I need something cold, refreshing and easy.
Cold Summer Beetroot Soup
A fresh, light cold summer beetroot soup.

Ingredients
- 200 g boiled and peeled beet roots
- 3 freshly salted cucumbers
- 1 cup of kefir or fermented milk
- chopped fresh dill and parsley and scallions – salt, pepper, thyme, mustard You can add boiled potato and grated hard cheese

Directions
- Toss together all ingredients using blender 2. use more milk to get more liquid consistent
- Serve
My second attempt to reach you today ! First disappeared !!! Ruta: I do not know which cookery show you watched but borscht is very well known around most of the world. Many famous English and Australian TV chefs, amongst others, have given us good variations on the theme. Your cold version is similar to one I make . . . only a few good ingredients, quick to make and healthy to eat – yours looks very appetizing! I sometimes substitute buttermilk or runny yoghurt for the kefir. Thanks !
