This is dish from my childhood.
In June or July, when all vegetables start to mature. Carrots are almost always seeded too closely together. And it is important to thin carrots, they will not grow to maturity unless they have space to do so.
So, you have tiny carrots , first small potatoes are sweet peas and maybe even first cabbage.. aand this is mean Summer New Vegetables Milk Soup. Easy to do and very delicious.
Of course, you can cook it all year long, but then,. it is not This Soup.

Interesting fact: In Estonia, cottage cheese began to be produced in order to meet the cheese production plan set by Moscow to the USSR. The National Planning Committee of the USSR almost doubled the cheese production of the Estonian SSR for the five-year plan, So, this is the reason why Estonia began to produce cottage cheese which was reported as cheese in the reports 🙂
But still. There is nothing better than fresh new potatoes with little bit salty cottage cheese.

A light and easy summer recipe.
Kefir makes a chicken soft and gives the sour taste, dill adds an exciting taste flavor.
And there are no Estonian recipe without garlic. Garlic is necessary to get right touch and taste. Serve with fresh berries combined with honey.

Sweet strawberries complements tart rhubarbs.
Our mothers cooked Rhubarb Kissel with Strawberries usually in June, when everyone were fed up with rhubarb, but strawberries began to mature and were not so many.
Rabarberi/Rhubarb Kissell is dessert, what you can enjoy as separate dessert or as addition for other desserts. Like quark pudding or bread pudding.
To get Estonian touch, serve kissell with Kama cream.
Lüübnitsa is the small village in Setomaa. South eastern Estonia, near the Pihkva lake. Lüübnitsa has become very famous for her onion and fish fair. If you visit Estonia during summer time, you are welcome 🙂

The Baltic herring is one of the most important fish in the whole of the Baltic Sea and the Estonians’ feeder for centuries.
In 2007 the Baltic herring was announced the national Estonian Fish. The Baltic herring is such an everyday fish for us and believe me, we have a lot of recipe books like ” 100 dishes from Baltic herring”.
Since Baltic Herring are cheap fish, she had a reputation for many years as a poor human food. But because of delicious taste this reputation is gone. And from early spring to late autumn, Baltic Herring is mandatory part of Estonian cuisine.
Especially in spring, because the spring Baltic herring is big, fat and delicious.

Classical recipe, pesto, with Estonian twist. For base I used tart and fresh spruce tips, combined with hazelnuts and local hard cheese.
Wonderful combination and spread for a rye bread or as salad.
Light green, healthy and direct from nature 🙂
Simple and delicious cake for people, who do not want or like very sweet cakes.
Bitterness of the rye and chocolate , tart rhubarb and crunchy nuts creating wonderful combination.
Rye flour and quark make this cake lighter and healthier
And make quark by yourself. Trust me : It is much simpler to make than you might think. I won’t tell if you don’t 😉
