Very delicious cake. Crispy bottom and juicy sweet filling. Cottage cheese gives texture and berries adds sweetness.
I used blueberries, but during winter time it would be very ok to use dried fruits, Let them swell before in some liqueur.

Rowan Berries and Cottage Cheese Salad. Pihlaka- kodujuustusalat
Rowan Berries are very healthy. The astringent taste fades with freezing, so the best time to pick them is winter.
But.
If in your home forest are living greedy birds, you should pick them as soon as possible and leave in a deep freezer at least for 3 hours.
more options:
soak berries in salted water (1 teaspoon salt in 1-litre water)
or keep berries 3- 4 minutes in boiling water
Mash some berries and mix with sour cream
season with salt, sugar and pepper
Chop (red) onion or leek
add marinated or salted mushrooms
and cottage cheese
decorate with rowan berries
Goutweed Salad with Cottage Cheese. Kodujuustu-naadisalat
Today, 70 years ago, was for 20 000 Estonians and their families very sad day.
On 25 March 1949, 29,379 people, mostly women and children, were deported from Estonia to Siberia.
8 years before, on 14 June 1941, 10,000 people were deported from Estonia.
What was their guilt? The deportations targeted various categories of anti-Soviet elements and “enemies of the people”: the members of the former governments, higher state officials and judges, higher military personnel, former politicians, members of voluntary state defence organisations, members of student organisations, persons having actively participated in anti-Soviet armed combat, Russian émigrés, security police officers and police officers, representatives of foreign companies and in general all people having contacts abroad, entrepreneurs and bankers, clergymen and members of the Red Cross, kulaks, Approximately 23% of the population belonged in these categories. Entire families, including children and the elderly, were deported without trial or prior announcement. Of March 1949 deportees, over 70% of people were women and children under the age of 16.
Because of cold, starvation and hard work, a great many of the deportees died. Less than half of the deportees ever returned to their homeland
Let’s remember all these people.
Today, for us eating weed, vegetarianism and everything from nature is cool. At that time, it was a matter of survival. I hope and believe that history never repeats. But knowledge about edible plants is still valuable.

The Vertical Layer Cake with Cottage Cheese Chocolate Cream and Cranberry Filling. Kodujuustu- valge šokolaadi jõhvikakook
Delicious Cottage cheese and white chocolate cranberry cake with a twist.
This is a cake with vertical layers.
Trust me: It is much simpler to make than you might think. I won’t tell if you don’t 😉
I made biscuit/sponge dough because I love this. But you can replace it with butter dough. Find recipe. Butter dough is more firm and you get a little bit better layers.
My cake is juicy and because of chocolate is very sweet. Usually, I do not eat and like very sweet food. So, I added cranberry jam to balance the sweetness. Cottage cheese gives texture and little saltiness to complement all this sweet taste.
Did you know:
A common tradition on New Year’s Eve is “õnne valamine” or the ‘pouring of luck’. Lead is melted over a stove in a metal ladle and then poured quickly, or slowly into ice-cold water. What appears are interesting lead figures, which can then tell you your fortune for the upcoming year.

But still. There is nothing better than fresh new potatoes with little bit salty cottage cheese.
I believe I am not wrong to say that this is a typical Estonian summer dish. Potatoes and cottage cheese and sometimes with herring. Continue reading “Cottage Cheese and Potato Salad. Kodujuustu ja kartulisalat”
