Very delicious cake. Crispy bottom and juicy sweet filling. Cottage cheese gives texture and berries adds sweetness.
I used blueberries, but during winter time it would be very ok to use dried fruits, Let them swell before in some liqueur.

when I was a child, my mother used to make us simple everyday dessert. She smeared bread slices with quark cream and baked on the oven.
It was a delicious dessert or breakfast.
This dessert is inspired by this old retro dessert, but more difficult…:) I would say, that this dessert is for advanced…:)
because of .. you should add-on top of the bread slice, smeared with quark cream.. add some more layers 😉 more bread and more quark cream 😉

In Estonia is very popular a simple and very sweet Anniversary Quark cake. Anniversary because of for preparing this cake you need special ready-to-make cake powder “Juubeli”/anniversary.
All this combination is ultra sweet. But I believe, that reason for the popularity is simplicity. You should alternately put layers of quark cream and cake powder. and that is it!
It took from me time to figure out how to share this recipe with you. I believe you have not the same cake powder in your country 😉
I did different tests and now _I believe; I got the result, good and very similar to the origin. Ok, My recipe is not very sweet But you welcome to add as much sugar you like 😉
NB! Estonians usually add some apple or rhubarb slices as one middle layer or mixed in quark cream. Adding some fruits you get more moisture and delicious cake.

Have you noticed that dishes made from leftovers are always very tasteful?! 🙂 Like pizza or seljanka.
Or in Estonia ” Komeet” candies and cakes ” Rum Balls”.
Rum Balls cakes are made from leftovers. All the cake edges that are left in the confectionery or bakery, will be mixed together. And the result is very delicious sweets. At home you probably have not to cake leftovers 🙂 This old-fashioned dessert is a delicious way to use up that leftover stale cake!
So use biscuits or sponge cake.
To make this cake more Estonian I replaced rum essence to liqueur Vana Tallinn/Old Tallinn. And the result is even better 🙂

Paskha (also spelled pascha, or pasha; Russian: па́сха; [ˈpasxə]; “Easter”) is a festive dish made in Eastern Orthodox countries.
Estonian religious population is predominantly Christian. In 1845–1848, the movement from the Lutheran Church to the Russian Orthodox Church took place in all the southern Estonian counties and about 17% of the peasants in southern Estonia converted to Orthodoxy. Until then, Orthodoxy was mainly the religion of the local Russians and Seto (Setu) people.
Reason to change religion was hope to get land and better conditions.
So, lot of Russian Orthodox Church rituals and dish are still popular. I am personally do not like pasha. But pasha- inspired cake is very delicious.
