Classical recipe, pesto, with Estonian twist. For base I used tart and fresh spruce tips, combined with hazelnuts and local hard cheese.
Wonderful combination and spread for a rye bread or as salad.

Spruce Tips Pesto
A fresh, light, spring Spruce Tips pesto from Nature

Ingredients
- Spruce Tips
- garlic
- chopped fresh basil, marjoram and parsley
- grated hard cheese
- hazelnuts
- little bit oil
- salt
Directions
- Put in to the blender spruce tips, salt, greens, nuts and cheese and little bit good oil
- make fine. Season with smashed garlic, and some pepper, if needed
- Mix together.

I lived in a spruce forest in my younger life and would nip off the spruce tip and eat then when hiking. Wow, I never thought of making a pesto. Must take a hike on the forrest and harvest some tips so I can try this recipe.
