Beetroot and Herring Salad. Rosolje

rosolje1(1)Rosolje is a traditional salad, as Estonian Potato Salad, where all families has their own recipe.

For sure it contains  beetroot. And as says name ” rosol” (means (in Russian) cucumber brine,)  salted/marinated/fermented cucumbers is very important, as well.

Usually we make this with salted /marinated herring. But I have eaten Rosolje without herring and with meat or without meat and fish, as well.

Rosolje second meaning in Estonian is mess, diverse, colorful. So, this is my recipe

Apple Cake with Halva. Halvaaga õunakook

halvaa6una (14)Halva has nothing to do with Estonia. But I love halva.
This cake is a real fusion. Mix of Estonian traditional quark and eastern halva.
A delicious sweet and sour and juicy apple filling, complemented by Eastern flavours of halva, makes together for an amazing cake.
This cake is an eggfree.
In case you have not quark, use ricotta or mascarpone or cream cheese. But to get orignal and the best result prepare quark by yourself.
You can not imagine how simple it is !

Very Simple Juicy Apple and Barley Flour Cake. Õuna- odrajahukook

Barley was the mundane and the ordinary food and belonged on the table for common people. The oldest data of barley growing in Estonia dates back to the beginning of the first millennium BC.

And we still love barley. Karask is a famous dish in Estonian ethnic cuisine. But add some apples, and you get very delicious, simple and juicy cake.

I have been used in all my posts word “blueberry” in meaning ” wild blueberry”. Now I read Aho blog and found out that right expression is bilberry?

In Estonia, we are saying: “Heal lapsel mitu nime” – a good child has many names.
As I live in Estonia, Estonia is one of the greenest countries in the world: about 50% of Estonian territory is covered with forest.
I forage my berries by myself from the forest. And use in recipes wild blueberries/ bilberries.
Picking fresh blueberries, your mouth and hands are pink, fresh air and high roaring pines… this is amazing. This is summer.,

This year is The Blueberry Year.
I believe, that this is the first time I would say thank you for global warming. May and June and July in Estonia were amazing. Very warm, lot of suns. Real summer.

Sour and Sweet Rhubarb and Strawberry Kissell with KAMA cream. Maasika- rabarberikissell kamakreemiga

Delicous, full of fruits Kissel with beautiful colour.
Sweet strawberries complements tart rhubarbs.

Our mothers cooked Rhubarb Kissel with Strawberries usually in June, when everyone were fed up with rhubarb, but strawberries began to mature and were not so many.
Rabarberi/Rhubarb Kissell is dessert, what you can enjoy as separate dessert or as addition for other desserts. Like quark pudding or bread pudding.

To get Estonian touch, serve kissell with Kama cream.

Bitterness of the rye and chocolate , tart rhubarb and crunchy nuts creating wonderful combination.

Rye flour and quark make this cake lighter and healthier

And make quark by yourself. Trust me : It is much simpler to make than you might think. I won’t tell if you don’t 😉

Layered Dessert with Rye Bread. Taani talutüdruk

This is a very very simple dessert, but amazingly delicious.

In Estonia we call this dessert ” Taani talutüdruk”.
In direct translation ” Taani talutüdruk” means ” Danish farm girl”. Æblekage med ristet rasp/Gammeldags æblekage.

This dessert is very popular in Estonia because of the taste and simplicity.

Danes serve this with apple jam. Taani talutüdruk in Estonian style is with cowberry or cranberry or black currant jam.
For more better result we add some Kama  in to the curd cream to get more flavour.

Apple Pie by Virve. Virve õunakook

One of the easiest cake in the world.  I prefer yeast puff pastry with butter.

A Easy Apple Pie.

Important:
1. Puff pastry is blend. Do not use mild apples or season them with ginger, lemon.
2. If you prefer soft apples in cake, preheat and cook them before.

Ingredients

  • 400- 600 g yeast-puff pastry with butter.  Frozen pastry thaw before use.
  • 1 litre thin chopped apples or rhubarb.
  • (sugar, if use rhubarb), cinnamon
  • 4 eggs
  • 4 table-spoon sugar
  • 4 table-spoon flour
  • almond chips, icing sugar
