Pumpkin and Buckthorn Pudding Kõrvitsa- astelpajupuding

pumpkinpudding (3)Look at the colours! This is so colourful and beautiful dessert. Pumpkin is sweet and buckthorn is sour and altogether you receive delicious and amazing dessert. I added some black currants to get more colour and flavours.

Barley Groat and Pumpkin Fritters. Kruubi ja kõrvitsakotletid

A great vegetable dinner with Estonian twist.  Sweet pumpkin flavour is combined with pleasantly grainy barley groats. It is very easy and quick dinner from only 3 ingredients.

Cooking and preparing barley takes a lot of time, so it would be perfect dinner from leftovers. To add more flavours you can add some cheese or caraway seeds.

It reminds me story from childhood 🙂
I was I believe 5 years old and my sister 3. We went with our family to the forest. To pick blueberries and mushrooms. And middle in the forest. Big a compost or garbage ” mountain”. Full of pumpkins.
My mother took both berry buckets and father took two big pumpkins.
Walking. My sister starts to whine.. I am tired. Take me to the arms…
Father sigh, laid one pumpkin down and took sister.
Walking.
Now was my turn. I am tired. Please..please… I can not anymore.
And.
yes. We left both pumpkins in the forest…

 

Pumpkin became a commonly-used vegetable in Estonia in the 1920s–1930s. And now we love pumpkin 🙂

Pumpkin Salad

dsc01188Pumpkin Salad is mandatory salad on Estonian Christmas table. Together with Cowberry- Apple salad, Black Pudding and Roast Pork.

My salad is not very sweet. I like more sweet and sour.

  • Servings: 4-6

Pumpkin Salad is mandatory salad on Estonian Christmas table.

Ingredients

    One 0,5 litre jar
  • 300 g pumpkin, chopped in to small cubes
  • 1,5 glass of water
  • 0,5 glass of sugar
  • 2 cloves
  • 2 spice

  • 1,5 tablespoon 30% food vinegar

Directions

  1. Put all ingredients- excluded vinegar,in to the pot, bring to boil.
  2. 2.Decrease heat and  let simmer, while pumpkin is ready. Add vinegar.
  3. Pour in to the clean jar, and close airtight.
