One of the oldest grain cereals in Estonia was barley
Barley was the mundane and the ordinary food and belonged on the table for common people. The oldest data of barley growing in Estonia dates back to the beginning of the first millennium BC.

Barley Flour Mousse is a light and delicious dessert. Using cranberry juice you get pink and fluffy and using apple juice very light mousse.

Barley Flour Mousse. Odrajahuvaht

  • Servings: 4-6
  • Difficulty: easy

A fresh, light, Estonian dessert

Ingredients

  • 5 ml of water
  • 2 dl juice or jam
  • 1,25 dl barley flour

Directions

  1. Mix little bit too strong drink from water, juice and sugar.
  2. Bring it to the boil
  3. Add barley flour slowly to the boiling liquid. Stir constantly. Simmer for few minutes on low heat.
  4. Let cool and blend until fluffy.
  5. Serve with cold milk or sour cream

  1. Well, that is a new version to try in Australia 🙂 ! I only remember the semolina dish which was made at least once a week in our home and so enjoyed by little me ! Use barley often here as a side to meats and shall surely try this . . . don’t remember the apple versionL thank you for that also !!
