I like barley groats and I love combination groats with cheese and thyme.

Barley groats are a superfood, btw. Healthy and delicious. Serve with a salad for a great meatless dinner. Hope you enjoy it

This is classical baked macaroni and cheese recipe with twist.

Ingredients

  • 200 g (uncooked) barley groats
  • 400 ml milk
  • 4 tablespoon butter
  • 4 tablespoon flour
  • 150 g grated cheese (strong taste)
  • salt, pepper, mustard and thyme

Directions

  1. Prepare and cook barley. Preheat oven to 200 C  degrees.
  2. Melt the butter in a skillet or pot large enough to hold the barley when it’s done.
  3. Add the flour and stir over medium heat until the mixture is lightly browned; 1-2 minutes.
  4. Add the gradual milk and whisk to remove any lumps and add the salt and pepper.
  5. Cook over medium-high heat until the sauce thickens and starts to bubble. About 6 minutes.
  6. Stir in the cheese and whisk until smooth and melted. Turn off the heat. Season with mustard and thyme
  7. add groats to the sauce.
  8. Stir the groats into the sauce and bake in a greased dish ( ca 20 cm )  (sprinkle with bread crumbs)20-25 minutes until browned and bubbly.
