Ingredients

  • boiled barley groats
  • apple
  • tomato
  • brined or pickled cucumber. Look at for recipe
  • Sauce:

  • horseradish
  • sour cream
  • salt, pepper, dill

Directions

  1. Put barley to soak the night before. The following day put into cold water and let it boil, removing the foam. Simmer at low heat for about 20-30 minutes until soft.
  2. Chop vegetables into cubes, add boiled groats and sauce.
  3. Mix together.

  1. Oh Ruta – this is Old Home Week ! I so remember ‘kruubid’ from my childhood days and have been using them more and more for health purposes lately – found I very much like the earthy taste ! This way of serving is easy and tasty and healthy and fun . . . it will be made soonest as it would also mix and match so well with any meats grilled or barbecued in our summer heat . . . . . .
