A delicious vegetable salad from boiled barley groats. Best option to use leftovers

Ingredients
- boiled barley groats
- apple
- tomato
- brined or pickled cucumber. Look at for recipe
- horseradish
- sour cream
- salt, pepper, dill
Sauce:
Directions
- Put barley to soak the night before. The following day put into cold water and let it boil, removing the foam. Simmer at low heat for about 20-30 minutes until soft.
- Chop vegetables into cubes, add boiled groats and sauce.
- Mix together.

Oh Ruta – this is Old Home Week ! I so remember ‘kruubid’ from my childhood days and have been using them more and more for health purposes lately – found I very much like the earthy taste ! This way of serving is easy and tasty and healthy and fun . . . it will be made soonest as it would also mix and match so well with any meats grilled or barbecued in our summer heat . . . . . .
