Kama breading gives for meat special sweet taste. In case you do not have Kama, use rye bread crumbs. The tart plum sauce complements pork sweetness very well.

A unique Estonian inspired pork chops dipped in Kama coating .
- 4 pork chops — centre cut, bone-in
- salt, pepper
- 1 egg
- 1/4 dl milk
- 1 1/2 dl kama powder
- 4,5 dl cream ( 10%)
- 100 g plum pyre
- 2 tablespoon flour
- 20 g butter
- Pat chops dry with paper towels. sprinkle with salt and pepper.
- beaten eggs with milk.
- Dip chops in the egg mixture and dust in kama
- Fry the chops on both sides with some oil until golden brown
- Use ready plum pyre or bring sliced berries, some water (and sugar) to the boil. Cook until berries are soft. Puree and press through a sieve. Bring to boil and reduce. Season.
- Put butter in the pan add flour and brown. Add cream and mix very well. Add plum pyre. Mix thoroughly, bringing to a boil.
- Season with salt, pepper and herbs.
