So, I promised to Dianna that I will test similar recipe with rhubarb. (And replaced other ingredients the local)
Rhubarb is strange vegetable. The plant do not need (too) much care, so in all gardens are small place for rhubarb, which means that in May, June all Estonia has a flood of rhubarb. And we are looking for recipes.. ..what else to do. So, thank you Dianna for inspiration!

From rhubarb leaves we are cooking soup. And with others.. baking lot of cakes. And rhubarb leftovers freezing for winter..
When you are looking for Estonian cake recipes, there are always written “apple or rhubarb”. This is means that the same cake you can bake in spring with rhubarb and in autumn with apples.
Because rhubarb contains oxalic acid, it need aside or with him some calcium. Cake recipes contains usually quark, but this salad I suggest to serve with grilled cheese (for example)

Rhubarb Salad
A fresh, light, sour and sweet Rhubarb Salad for dinner.
Ingredients
- ca 300 g cabbage
- ca 100 g rhubarb
- 1-3 tablespoon honey
- 150 ml good oil
- salt
- dill, parsley
- hazelnuts

Directions
- Cut cabbage in to the very thin stripes. Add some salt and squeeze cabbage while cabbage is ” transparent” and juicy.
- Mix together peeled and sliced rhubarb, honey and oil. Let set few minutes. Taste. If rhubarb is very sour, add more honey
- Crush nuts and chop dill and parsley
- Mix all components together and season finally

What a pretty salad! I have fond memories of rhubarb when I was a child. We always had it in pie but your salad looks so fresh and bursting with flavor. Wonderful recipe!
