Halva has nothing to do with Estonia. But I love halva.
This cake is a real fusion. Mix of Estonian traditional quark and eastern halva.
A delicious sweet and sour and juicy apple filling, complemented by Eastern flavours of halva, makes together for an amazing cake.
This cake is an eggfree.
In case you have not quark, use ricotta or mascarpone or cream cheese. But to get orignal and the best result prepare quark by yourself.
You can not imagine how simple it is !
Apple Cake with Halva. Halvaaga õunakook
A simple eggfree apple cake

Ingredients
- 100 g quark
- 75 g butter, cold
- 150 ml flour
- 0,5 teaspoon salt
- 1 tablespoon sugar For filling
- 75 g halva
- 5 apple ( do not use sweet apples)

Directions
- Sift the flour into a large bowl, add the butter, sugar, salt and quark and rub in with your fingertips until the mixture resembles fine breadcrumbs.
- mix to a firm dough. Knead the dough briefly and gently on a floured surface. Divide in to 2 parts. 2/3 of dough wrap in cling film and chill while preparing the filling.
- 1/3 of dough: between two baking paper, roll out the dough, large enough to line the base of your pie plate or tin. And put in to the freeze.
- Peel and clean apples.
- On a lightly floured surface, roll out the cold dough until large enough to line the base of your pie plate, with a little pastry overhanging. Roll the dough over your rolling-pin, lift into the plate or tin and press it well into the corners.
- Sprinkle apples , then halva and again apples over the base.
- Take the 1/3 frozen pastry. Arrange the pastry strips on top of your pie,
- Bake at 180 C for 30 minutes, while cake is golden brown and apples are ready

Great post – but what actually is halva? A spice mix? I’ve never come across it before!

Halva is an oriental source of sweetness made from sugar, nuts or seeds 🙂 https://en.wikipedia.org/wiki/Halva
