Very delicious and nutritious Salad. Recently I heard from one Australian Tv cooking show, that broad bean must be peeled before eating. I do not know. I heard this first time. So, if you have a lot of time, you welcome to clean and peel. But I use and eat broad bean as you can see from photo. Unpeeled.

A fresh, light nutritious vegetable salad

Ingredients

  • prepared/canned broad beans
  • marinated/salted/fermented cucumbers. Look for recipe
  • boiled beet root
  • marinated mushrooms
  • For sauce

  • sour cream
  • mayonnaise
  • chopped parsley

Directions

  1. Chop cucumbers, beet and mushrooms in to cubes.
  2. For sauce mix together cream and mayonnaise and season with greens. Be careful with salt. Your cucumbers, mushrooms and beans already are salty
  3. Serve
