Carrot came from Afganistan and original carrot was purple. Orange carrots came later.
I love this easy salad because of how it looks like. Beautiful colors. Fresh vegetables are crunchy and crispy and using stripes make this simpler to eat.
Definitely you can add more different vegetables and combine with dressing and flavours.
Crispy Vegetabel Salad
A fresh, light and crispy vegetable salad

Ingredients
- cucumber
- carrot
- hard cheese
- lettuce
- cedar pine seeds
- Dressing: oil, acid (try lemon or white vine vinegar or balsamic), and/or add some sweet chili sauce, salt and pepper
Directions
- Use vegetable peeler (special knife) and make stripes
- mix together oil, vinegar and chili sauce. Season
- Mix together dressing and ingredients. Add seeds and serve

I did not know this about carrots about the colour. Well, I will try purple carrots. Even I have seen white ones but carrot not parsnip.

Yes well I saw them at a farmer’s market and I asked was it a parsnip and was told no it was a carrot. I think there was not much taste compared to coloured ones!
