Homemade mayonnaise. This is a piece of cake.  You have to follow a few simple rules and everything is easier than you can imagine.

When I was a child was very usual and popular appetizer eggs with mayonnaise. This combination is still very delicious. But I like this homemade mayonnaise as a simple spread as well. Or prepare different salads. Sour spruce tips are complements other spring vegetables cucumbers, radish and lettuce very well.
I did my recipe with spruce tips. Spruce tips are a little bit tart and full of vitamins.

Important:

  • For the preparation of the mayonnaise, all materials must be at room temperature.
  • If you do not succeed, use classical preparation direction: add oil slowly, stirring constantly
  • Keep your home-made mayonnaise tightly in the refrigerator not more than 5 days

Spruce Tips Mayonnaise. Kuusevõrsemajonees

  • Servings: 4-6

Ingredients

  • 1 egg
  • 1 teaspoon of mustard
  • 1/4  lemon juice
  • 250 ml of oil
  • salt, pepper, sugar
  • a handful of spruce tips, sliced or pureed

Directions

  1. Use a high deep bowl.  All materials must be at room temperature.
  2. Add egg yolks, salt, pepper, mustard and few spruce tips. And squeeze in lemon juice.
  3. Pour in oil. And do not mix!!
  4. Place the hand blender on the bottom of the dish
  5. Mix for about a minute without moving the mixer. You should get a white emulsion
  6. gently raise the mixer upwards. Use the maximum speed
  7. 7. season and add remaining sliced spruce tips.

  2. Being medically traine3d and a nutritionist and basically enjoying a very varied Asian diet, mayonnaise is not often on my menu. When I feel the need to use it I always make my own.. Yours is very nice but spruce tips would be more rare here than the best Beluga caviar 🙂 ! Wondering what it would taste like – enjoy, since you can 🙂 !!
