This is the explosion of flavours and textures. Crispy cucumbers, sour cranberries and mushrooms, soft egg, sweet turnip and groats, which are tieing everything into one whole
As every salad, combine ingredients as you like. This is one possible combination. You can replace mushrooms and add ham or other meat.

Ingredients

  • 1 dl barley groats
  • 3 pickled/ salted cucumbers
  • 1 (red) onion
  • 1 boiled turnip
  • ca 100 g salted or marinated mushroom
  • 3 boiled eggs
  • cranberries
  • Sauce:

  • 150 g sour cream
  • 150 g mayonnaise
  • salt, sugar, horseradish

Directions

  1. Prepare and boil barley groats and turnip until soft. Let them cool.
  2. Boil eggs.
  3. Cut all ingredients into cubes and mix together.
  4. For salad, sauce mix together sour cream and mayonnaise, season with horseradish ( and salt or sugar)

  1. How very interesting and how very Estonian and how very different to anything I have made before and shall ! When the fires stop burning . .Love the marinated and pickled cucumbers and mushrooms coming into the fray ! . OK, OK – do not use mayonnaise for health reasons but there is always yogurt in the fridge . . .

    1. What is happening in Australia is just terrible. I am very hopeful and praying that this will soon be over. The flora and fauna of the world and Australia will never be the same again…

      1. Ruta – unless unexpected rain arrives the fires will enlarge and burn until autumn. I have lived inside one of the main fire zones for eight weeks and shall never be quite the same again, At the moment much of the activity has moved southwards to our beautiful alpine country – the circumference of the largest of the nearly 80 fires there is over 5100 kms . . . the smoke which is killing our hearts and lungs could reach from Iceland to Turkey ! . . . We say thanks for every day below 35 C with winds under 50-60 kms per hour . . . thanks for caring !
