A  light, vegetable dish for an If you want a simple, delicious, low-calorie and all-natural healthy salad this is it! Very delicious and nutritious dinner. Sweet cauliflower, seasoned with lemon. Tasty rosehips berries and wonderful mushrooms.

Fresh chanterelle: The mushrooms are cleaned without water, with only a clean, dry towel and paring knife. Heat the chanterelle in a skillet without fat/butter until water has evaporated.
Frozen chanterelle: melt, fry slightly

Ingredients

  • 300 g cauliflower
  • 1 clove garlic
  • 20 g butter
  • lemon juice
  • salt, pepper, dill
  • 20 g butter
  • 150 g mushrooms
  • a handful of rosehips berries
  • apple juice ( natural, not sweetened)
  • salt, pepper, dill

Directions

  1. Cut cauliflower into slices.  Wrap into baking paper, spread cauliflower with butter, season with lemon juice, salt, pepper and sliced dill. Wrap in. And baked into the oven at 180 C (convection) for 15 minutes. NB! Try, because of the cooking time depending on the thickness of the slice.
  2. Remove seeds from rose hips berries.
  3. Heat the fresh mushrooms in a skillet until water has evaporated. Add oil and berries. Add some apple juice, reduce. Season.

  1. Indeed a very easy and healthy dish to prepare . . . looks appetizing also ! Interesting that it was Teachers’ Day in Estonia yesterday as a dear friend from Sweden, whose wife is a high school teacher, also wrote of a day of celebration . . . best . . .
