A  delicious and very sweet old school real food cake

This cake from an era, when people ate sugar and butter and flour… Very sweet, very rich. Buttercream and chocolate and a lot of crunchy nuts.

This is a cake from my childhood. The cake from a time when calories were burned playing in the yard. But still. This simple and rich cake was my favourite at this time and now, as well.
Well, now I just use less sugar and more cacao :)…

 

 

 


Hazelnut and Cacao Cake

A delicious and very sweet old school real food cake

Ingredients

    Cake
  • 4 eggs
  • 4 tablespoon flour
  • 3 tablespoon sugar
  • 1 tablespoon cacao
  • Filling

  • 600 g butter
  • 200 g icing sugar
  • 6 egg yolks
  • 3 tablespoon cacao
  • for seasoning Vana Tallinn or other rum or liqueur
  • For decoration

  • 100 g chopped hazelnuts

Directions

  1. Preheat oven to 180 degrees C. Line a pan with paper liners. You can use a round cake form or make sheets.
  2. 2.  In a large bowl, cream together eggs and sugar until light and fluffy.  Mix the flour with the cacao, and gently stirring,  sieve flour mixture into egg foam.
  3. Bake at 180 degrees C  for 30 to 40 minutes, or until a toothpick inserted into the centre of a cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack.
  4. Make the cream: beat sugar, mixed with cacao and the butter. constantly mixing add one by one egg yolks, until cream is light and fluffy, Season.
  5. Using a  knife, trim the tops of the cakes to make a level (in case you used round pan). Place bottom layer on a plate and with an offset spatula, carefully top with 1/3  of cream. Place the second cake layer on top, spread with another 1/3 cup of the cream. Repeat with the third layer. Decorate the cake with nuts.
