Estonia is a digital society.
I need only 5 minutes to fill out a declaration of my income tax or get a doctor prescription or to participate in elections. Because of e- state and e-government.
Estonia has started teaching first graders to code.  And final GoCompare research has revealed Tallinn to be the world best city for millennials starting a business 🙂

September 1 is celebrated as Knowledge Day in Estonia. School Summer Holiday is over and an academic year runs again from 1 September.

Let’s celebrate with us and prepare simple retro Mayonnaise Cookies.
Despite the Mayonnaise, these cookies are sweet.

Mayonnaise Cookies. Majoneesiküpsised

  • Servings: 30 pcs
  • Difficulty: easy

A fresh, light sweet and salty retro cookies

Ingredients

  • 100 g butter
  • 1 dl sugar
  • 1 egg
  • 100 g mayonnaise
  • 4 dl flour
  • –  1/4 teaspoon soda

Directions

  1. Beat soft butter and sugar together into a light foam.
  2. add beaten egg gradually while stirring. Add other ingredients. Mix together.
  3. Form by teaspoon small cookies and place on the greased or  baking paper covered tray
  4. Bake at 180 C convection for 15- 20 minutes

  1. Thanks for the facts about Estonia. I know nothing about it so it’s fascinating to hear about a place that is new to me.

    This recipe looks interesting. I remember as a kid my mom would often make “Mayonnaise Cake” which sounded awful the first time I had heard of it. Those words don’t seem to belong together. And yet, when she added chocolate, sugar, and the other ingredients and topped it with buttercream frosting it was as amazing as, no doubt, these cookies are.

    1. Thank you for your comment 🙂 :).mayonnaise sounds strange but it is oil, eggs and acid. All are ok for cake. And some salt makes everything better :).
      I hope you will share your mothers recipe in yur blog. There are never too much chocolate cake recipes ( despite even with mayonnaise :).:).)
