raimevorm1 (2)The Baltic herring is one of the most important fish in the whole of the Baltic Sea and the Estonians’ feeder for centuries.

In 2007 the Baltic herring was announced the national Estonian Fish. The Baltic herring is such an everyday fish for us and believe me, we have a lot of recipe books like ” 100 dishes from Baltic herring”.

Since Baltic Herring are cheap fish, she had a reputation for many years as a poor human food. But because of delicious taste this reputation is gone. And from early spring to late autumn, Baltic Herring is mandatory part of Estonian cuisine.

Especially in spring, because the spring Baltic herring is big, fat and delicious.

Baltic Herring and Potato Casserole

A fresh, light, fish and vegetable casserole for dinner.

Ingredients

  • 600 g potatoes, boiled 3-5 minutes, sliced
  • 400 g fresh Baltic herring fillets
  • 3-4 tomatoes, sliced
  • 1-2 eggs
  • 1- 1/2 glass of milk
  • grated cheese or bread crumble
  • salt, pepper, dill

Directions

  1. In a medium bowl, toss together milk and eggs, season with pepper and salt, dill
  2. Cook and drain potatoes.
  3. Put as bottom layer potatoes, add fish and cover fish with remaining potatoes.
  4. For upper layer add tomatoes and sprinkle over with grated cheese or bread crumble. Pour casserole over with eggs milk mixture.
  5. Bake in oven at 180 C for 40 minutes.

  1. Oh such Joy to find such a suitable recipe for the fresh Baltic herring we have at our fishmonger these days. This dish shows me yet again the similarities between Swedish and Estonian food cultures.
