Rice with Pork. Plov

This January, I would like to introduce you to a foreign dish that throughout the years has become more and more popular in Estonia to the point where me and my fellow Estonians consider it being part of our national cuisine.

Plov. Originally, it’s a dish from the Middle East/Central Asia that has gone through a long journey from south to north to our dinner tables. With some touches of local seasoning and ingredients Plov has become one of the most common ”everyday meals” in Estonia. As Estonians love pork so much, one of the main ingredients of the Estonian Plov is definitely pork.

Ingredients


– 300 g pork, cut in to the cubes
– 1 clove of garlic
– 1 onion
– 1-2 tablespoon tomato paste
– ca 220 ml rice (1 cup)
– dried fruits: apricot or plums or raisins
– salt, pepper, adžika (Ajika or adjika) sauce, sugar, cinnamon.. oil

Directions

  1. use thick bottom stewing casserole. Heat oil and fry meat cubes in very hot oil for a short time until the pieces are slightly browned. Add salt and pepper. Decrease heat.
  2. Add chopped garlic and onion, and fry slightly.  Stir. And add ca 1/2 cup of hot water. Let simmer under half covered lid.
  3. Stir time to time and check about water. If needed, add more hot water
  4. When meat is half ready (takes ca 10-20 minutes, depending on meat quality), add tomato paste. Mix well.
  5. Add rice and prepared dried fruits. Pour over with ca 700 ml hot water or stock, mix well and let simmer at a low temperature under half covered lid.
  6. Rice should be ready after  15-20 minutes.
  7. Season

    1. In our stores it is ready sauce, like Worchester or something else. I have not done this myself, but I believe, this is possible.
      First recipe I found: 8-10 garlic cloves
      150 g of red chili pepper
      1 medium celery
      1 big red pepper
      4 dl fresh chopped dill
      2 dl fresh chopped coriander
      0.5 dl of wine vinegar
      Salt to taste
      Crush everything in the food processor. Season and let set in the refrigerator over night.
