I used in headline word “mushroom”. But in Estonia, when we are talking about mushrooms, we mean forest and/or wild mushrooms: milk mushrooms, russulas, chanterelle….
As Estonia has an abundance of forest, we like to pick berries and mushrooms.
For winter mushrooms are marinated, or salted or fermented. Or dried.
But the easiest way to freeze. Heat the mushrooms in a skillet until water has evaporated and add butter. Pour mixture into boxes and freeze over winter.
In this photo and recipe I used marinated russulales.( it is very complicated to find english translation, but it seems to be false saffron milkcap)
Simple Mushroom Salad
A light snack.
Ingredients
- 300 g mushrooms
- 2 (red) onion, chopped
- 150 g sour cream
Directions
- Salted mushroom leave at least for overnight to swell and/or boil in the milk.
- Chop mushrooms and onion
- Mix together, add sour cream. NB! in my photo too much sour-cream !
Serve with bread, tomato, apple…

What is the Latin name of the mushroom you are using? If the genus is Russulales then it can’t be the False Saffron Milkcap as that is Lactarius deterrimus. Well… that’s what it would be here in the USA. Common names are really hard to use to identify plants and fungi. Regardless, the recipe sounds tasty!

I use different mushrooms. They need different treatment, Best are Lactarius deterrimus, they do not need special processing. But I have Lactarius torminosus, Lactarius rufus and Russula aeruginea- vinosa-flava-paludosa.. and so on.
I tried to find english names, but this is very complicated, So, maybe some names are wrong 🙂
But still these mushrooms are perfect and delicious 🙂
