Impossible to write Estonian food blog without quark.
You can buy quark from shop, but this is very easy to do by yourself.
If you have children, call them to join. To make quark is fun process and lesson about chemistry, cooking, health and fermentation 🙂

Estonian quark is made from skimmed milk and mesophilic starter. This is fat-free and mesophilic means, that quark is fermented on the low temperature. And if quark ready, bake delicious quark- cake.

A fresh, light quark cake for easter

Ingredients

  • 125 g room temperature butter
  • 1 dl sugar
  • 1 egg
  • 3 dl flour
  • 1 teaspoon baking powder
  • Filling

  • 250 g quark
  • 250 g sour cream
  • 1 dl sugar
  • 2 eggs
  • 2 tablespoon starch

Directions

  1. Whip butter with sugar
  2. Add egg, flour and baking powder
  3. Put dough in 26 cm baking paper covered baking form. Bake in oven 200 C 10 minutes
  4. For filling whip eggs with sugar.
  5. Add quark, sour cream and starch.
  6. Pour filling in to bottom and bake 30 minute

  1. my family liked to go on roadtrips when i was a child, and we stopped by a cheese store that had quark. i thought it was the funniest thing ever because it sounded like “quack” (i wasn’t more than 10 at the time haha), and was surprised that it actually tasted good. haven’t used it on anything besides crackers, but this sounds delicious!

    1. I suggest you try. This is very easy to do by yourself at home (in my post you can find link) . Quark is healthy, full of protein and less fat than cream cheese and more mild taste than ricotta 🙂 you will like this 🙂
