Delicious Estonian cake full of Blueberries.

Blueberry Pie

Ingredients

  • 300 g soft butter
  • 3 dl sugar
  • 2 eggs
  • 3 dl low quality flour
  • 3 dl high quality flour
  • 1 teaspoon baking soda
  • Cover:

  • 1 litre blueberries or cowberries or raspberries
  • 6 dl sour cream (creme fraiche or greek yoghurt)
  • 1 1/2 dl sugar
  • 3 eggs
  • 1 teaspoon vanillasugar

Directions

    Estonian Blueberry Cake
  1. Preaheat oven
  2. Mix soft butter and sugar. Add one by one , keeping whipping , eggs.
  3. Mix flours with baking soda
  4. Sift the flour in the dough
  5. Pour dough in to baking paber covered form
  6. Mix whipped eggs and sugar and add sour cream.
  7. Add carefully berries
  8. Pour in to dough
  9. Bake 30 minute 200C
